Whoever said you have to go with a typical wedding cake? Definitely not Regina and Henry!  When Regina wrote me an email about a “Hello Kitty and Rilakkuma bear” wedding cake, I was excited to meet up with her to talk about this particular project.  And when I finally met Regina at a local Starbucks ,  I knew I wanted to work with her instantly.  She was  very friendly, easy to talk to and I love how she always had a very sweet smile on her face.  It turns out that  my first instinct was right, she was an absolute delight to work with.  The best part of this project was that this wedding cake was a surprise for Henry, the groom had no idea that Regina was planning this special cake for their wedding day!

This tall cake was a classic red velvet cake with cream cheese filling , iced with dark chocolate ganache and covered with white fondant.   Accented by handmade purple sugar roses, filler flowers, and of course the focal point of the cake was the custom made Hello Kitty (in costume) & Rilakkuma bear cake topper.

Love is in the Autum Air – Carmen + Sam 10.14.2012

There is something really romantic about Fall weddings, maybe it’s the fallen leaves on the ground and the rustic colours of Autumn, but it’s the calm quietness this time of the year which makes it my favourite season.

I’ve had a chance to preview some of the pictures captured by the  brilliant duo -  Vince & Irene from Prestige Photo , they  did Carmen and Samuel‘s Fall wedding such beautiful justice!  Here is a picture by Prestige Photo of the wedding cake we made for the wonderful couple.  Also, I would like to mention that cupcakes were made by Sam’s wonderful friend, Alison – she did such a great job, I bet those cupcakes were really yummy!

This cake is probably the cutest wedding cake I’ve made so far, I am usually under pressure when making wedding cakes  – but I think I was smiling the entire time  making this cake because the cake was just so darn cute.

For those of you who are interested in cake decorating -  below are some notes on the design and making of the cake.  (For those of you that are only interested in eating cakes, here are  more pictures for you to drool over. )

The cake was a 6″ x 6″ chocolate cake with strawberry Italian meringue buttercream, iced with dark chocolate ganache, wrapped in chocolate fondant.   For the design, Instead of traditional flowers, Carmen and Sam wanted to incorporate their bird mascots and the Fall theme for the cake like they did for their invitation.  ( The “original birds” are actually paper weights that the couple had bought. )  All the decorations including the leaves and the nest were made out of gumpaste.  The cake topper birds were constructed using gumpaste,  styrofoam for the core and  the eyes are actually candy pearls that turned out to the be perfect size.

Behind every cake, there is a challenge.  This one happened to be the NEST!  Each twig was made individually with an extruder, then cuts were made on each strand to look like twigs or else they would look like spaghetti!  The nest was constructed in 3 layers, and each layer had to be dried before laying down the next, so in total, the  making of the nest took approximately 3 days.  I was happy with the result but my biggest mistake was not making a back-up nest.  What was I thinking?!

Luckily, the nest and the cake made it to the wedding safe and sound.

Sweet Dahlia

We moved into a new house the week of Gail’s birthday (more space for cake, yay!!!) , so I wasn’t able to make Gail a birthday cake.  But instead, I made her this VERY belated birthday cake – I called it a “birth-month cake”.

This is an extended tier cake which I love, it has the height of a 3 tier cake without being too dramatic. It’s modern and chic – just perfect for birthdays and weddings.

I also wanted to make a new flower that I haven’t made before – Dahlias.  It took some practice and I finally got it down to how I wanted it.  There are an insane numbers of small petals so it’s a good thing that patience is one of my attributes :)

Sunflower Birthday Cake

For the last little while, I’ve been making quite a few character cakes.  Although I enjoyed making each and every one of them , I was itching to make sugar flowers… then I received request to make a cake with Sunflowers!

My head was filled with different ideas like making white fences around the cake, flower pots, miniature white houses with earth tone shingles… then I decided to stick with some thing clean and simple – I think it provides the best canvas to showcase the sugar flowers.

Diablo 3 Cake

I was asked by Vicky to make a surprise cake for her husband Derrick’s 30th birthday – a Diablo 3 theme birthday cake!  After doing some research and getting suggestions from my husband who is an avid gamer, I settled on a mini version of Tyrael  – just because it’s a cool character to put on a cake.  Vicky then asked me to add on the treasure goblin and some gold coins which was a such a great idea!

Since Derrick was turning 30, I wanted to incorporated his name to look like the Diablo 3 logo.  I used Adobe Illustrator to put the graphics together and it was then printed on edible frosting sheet, finally glued (sugar glue) on to the side of the cake.

Sex and the City Bridal Shower Cake

Sex and The City- It has forever changed the everyday woman and bridal shower cakes.

Vicky and I knew of each other because we both worked on Candy and Fraser’s wedding back in June.

She and her husband Derrick from ellumin photography did an amazing job capturing beautiful moments from the wedding and amazing photos of the cake that I had made for the couple too.

The bride-to-be will be getting married abroad so Vicky wanted the Toronto cityscape to be in the design, and what’s Sex and The City without a glass of Martini, jewlery , haute courture handbag and shoes?
